Very simple winemaking. The fruit was hand harvested, destemmed and directly pressed into a mixture of 300L barrels and stainless steel. Some barrels were topped, some were left on small ullage to coax out some complex flavours. After malolactic fermentation the wine was blended together, racked back into stainless and bottled after 7 months elevage.
