Maison Nicolay is the slightly more boundary pushing sister winery to the historic biodynamic estate Chandon de Brialles. Maison Nicolay purchases both grapes and unfermented grape juice from biodynamic friends and neighbours and the wines are made with little human touch as possible, meaning no pumpovers, filtration or addition of sulphur. They believe this gives the purest unadulterated expressions of the grape.
