Fully destemmed, cold macerated for 4-7 days, pressed to tank with 16-24 days on skins and racked to older French barrels, just under a year in oak. Medium purple in colour.  Rustic and smoky aromas blend with bright fruit to create a complex aromatic profile.  On the palate bright cassis flavours mix with black cherry.  Soft and velvety tannins with a lifting tart and clean finish.
