This new cuvee was created via purchased fruit (all organic) from Catherine’s neighbours and friends. The Grenache came from a young local grower whom she works with closely, and the Carignan came from Minervois. All fruit is de-stemmed, 10-12 days maceration, only a little amount of foot stomping, elevage in old barrels for 9 months.
