Fruit was kept 1/3 whole bunch (carbonic) for two weeks and the remainder naturally fermented whole-berry. Pressed after 3 weeks before resting in French barriques for 9 months. Ripe Strawberries & rhubarb with a little sprinkling of umami and some whole bunch spice.
