Made from 30+ year old Pinot Noir Vines from the Hawkins' farm in Gippsland, the wine is meticulously racked between 5 and 7 times before bottling, reducing the amount of lees that make it into the bottle to maintain the focus on the quality, elegance and purity of Pinot Noir. Bottling at about 80% the bubbles are a lot finer and...bubblier than a lot of Pet Nats.
