Fruit for the Le Sauvignon Sensual is sourced from a vineyard in Totness owned by Robert Surmann. The vines are 30 years old and lie on black sandy soils that lie over petrified schist. The fruit is whole bunch pressed and the free run fraction only is sent to large format, seasoned oak for fermentation. The wine rests in oak until bottling.
