François's passion for winemaking began during his upbringing in Burgundy, where his father worked as a microbiologist for the famous Hospices de Beaune. After frequent trips to the Jura as a teenager, Francois moved there after his oenology degree in 2006.
His wines have been at cult status for years, with organic farming, low yields and a fastidious approach to vineyard health. The ouille (topped up method) whites are vibrant, concentrated and superbly long lived, while the reds are lithe, elegant and electric.
