Winemakers Notes: Vibrant ruby colour and vibrant aromatics to match. The 100% whole bunch fermentation provides an array of lifted flavours ranging from candied lolly to ripe raspberries. The earthy, rich tones and natural acidity of Mourvedre also shines through to make for an amazingly complex, light-bodied red. The lack of physical maceration ensures that there is minimal tannin influence, the wine gets its flavour and complexity purely from the fruit flavour and unique fermentation. Designed to be drunk early (even lightly chilled) to maximise its freshness - it will however, be interesting to see how it develops over the next 5-7 years as there is an abundance of flavour complexity and structure from the Mourvedre grape.
